(I separated the cookie from the creme filling and added the creme to the cream cheese, this is optional) &lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;                     1 (8 ounce) package Cream Cheese, softened&lt;/li&gt;&lt;li class="plaincharacterwrap"&gt;                     2 (8 ounce) packages BAKER'S&amp;nbsp; Baking Chocolate, melted&amp;nbsp; or I used a tub of the white chocolate and then some milk chocolate, I think they look prettier white :)&lt;/li&gt;&lt;/ul&gt;&lt;/div&gt;&lt;div style="border-top: 1px dotted rgb(204, 204, 204); margin-top: 20px; width: 300px;"&gt;     &lt;/div&gt;&lt;div class="directions" style="margin-top: 10px;"&gt;         &lt;h3&gt;             Directions&lt;/h3&gt;&lt;ol&gt;&lt;li&gt;&lt;span class="plaincharacterwrap break"&gt;&amp;nbsp;(Optional) &lt;/span&gt;I separated the cookie from the creme filling.&amp;nbsp; You can just crush the cookies whole.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;&lt;span class="plaincharacterwrap break"&gt;Crush cookies to fine crumbs in food processor&lt;/span&gt;&lt;span class="plaincharacterwrap break"&gt;. (Cookies can also be finely crushed in a resealable plastic bag using a rolling pin.)&amp;nbsp;&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span class="plaincharacterwrap break"&gt;In medium bowl mix cream cheese and creme filling together.&amp;nbsp; Add crushed cookies and mix until well blended. Roll cookie mixture into 42 balls, about 1-inch in diameter.&amp;nbsp; Put in the freezer to harden. &lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span class="plaincharacterwrap break"&gt; Dip balls in chocolate; place on wax paper-covered baking sheet. Turn the machine to speed 1(old machine) 2(new machine) and continue to add wheat flour only until the dough begins to pull away from the sides of the bowl. When you can see the sides pull clean as well as the dough coming clean from the bottom of the bowl you know you have enough flour. (do not add too much flour) the dough should be very sticky and does not come together at this point, but the bowl is clean. &lt;br /&gt;Knead on speed 1 for 8-10 minutes or until the gluten has been developed. If you feel your dough is too dry, simply add a few tablespoons of water to moisten. (always pulling the sides clean) if dough starts sticking simply add a little white flour to take up the moisture. (remember your bosch has 700 watts of power and a reset button.) &lt;br /&gt;&lt;br /&gt;Oil your hands, remove dough from mixer onto a slightly oiled counter, divide your dough with a dough divider into 4-5 large loaves depending on your pan size. (we like the 8 ½ by 4 ½” pan, and we usually get 5. However, because we never measure our flour exactly, sometimes we get 4, it will depend on the weather and the climate outside. &lt;br /&gt;&lt;br /&gt;Shape loaves, and place in a well greased or sprayed (pam) pan, never use oil. Cover with a dry towel and let rise until dough has risen double or approx. 2 inches above the rim of the pan. This will take from 30 to 60 minutes depending on the room temperature. &lt;br /&gt;&lt;br /&gt;Bake in preheated oven at 350 degrees for 30-35 minutes, or until the inside temp. Is 200 degrees. An instant read thermometer is very useful in telling whether your bread is done. Tests after baking time is complete by taking bread out of its pan and pushing the thermometer into side or bottom of loaf. If not 200 degrees, place back in pan and bake another few minutes. &lt;br /&gt;&lt;br /&gt;Cool on cooking racks before putting into bread bags. Let the sauce soak into the meat for about 30 minutes.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Lightly spray 2 pans with non-stick baking spray. (I usually use one 9x13 and one 9x9 but it will vary with how thick you stuff your enchiladas) Pour green enchilada sauce into pans to coat the entire bottom. Fill tortillas with shredded meat and desired amount of cheese. Roll and place in dish.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Pour remainder of sauce over enchiladas and sprinkle more cheese on top - don't be stingy! Bake uncovered at 350 degrees for 30 minutes. Then turn on broiler and place enchiladas nearer the top of oven. Let me tell you though if you love lemon and pasta you will love this...YUMMY!!! For this recipe I used my pampered chef deep cover baker but you can use just a regular baking pan.&lt;br /&gt;&lt;br /&gt;Serves 4&lt;br /&gt;&lt;br /&gt;3 1/2 Cups penne pasta&lt;br /&gt;3 1/2 Cups water&lt;br /&gt;2 Chicken breasts&lt;br /&gt;olive oil&lt;br /&gt;3 cloves garlic&lt;br /&gt;salt&lt;br /&gt;pepper&lt;br /&gt;2 tb butter&lt;br /&gt;1 1/4 Cups of half-and-half&lt;br /&gt;1 Cup chicken broth&lt;br /&gt;1/3 cup lemon juice&lt;br /&gt;tt (to taste) chopped basil&lt;br /&gt;&lt;br /&gt;First cut off fat from chicken breasts and butterfly. In a large skillet cover bottom with a thin layer of olive oil and heat slightly. Add 1 chopped garlic clove and saute. Add some salt, pepper and a lemon juice. Place chicken in pan and saute until both sides have some golden color and cooked thoroughly. Remove from pan and chop up into small pieces.&lt;br /&gt;&lt;br /&gt;Place penne pasta in deep cover baker and water. Cook in microwave for 18 min.&lt;br /&gt;&lt;br /&gt;While pasta is cooking melt butter in pan. When melted add 2 cloves of chopped garlic and saute. Add broth and half and half. Bring to boil and reduce to simmer for 8 min. Do not heat too high or cream will burn. Add lemon juice and 1/2 ts of pepper. Simmer for 2 min stirring consistently. Remove from heat or keep on low.&lt;br /&gt;&lt;br /&gt;When pasta is done drain any remaining water, add chicken and sauce. Stir ingredients together.  Top with chopped basil and lemon zest. Combine chicken and seasoning in Deep Covered Baker (from Pampered Chef); mix well. Spread chicken evenly over bottom of baker. Microwave, covered, on High 4 minutes; stir to &lt;span id="SPELLING_ERROR_4" class="blsp-spelling-corrected"&gt;separate&lt;/span&gt; chicken. Microwave, covered, an additional 4 minutes or until chicken is no longer pink. Drain the chicken.&lt;br /&gt;Combine salsa and broth in a bowl. Chop cilantro. Arrange half of the tortilla chips over bottom of same baker, breaking chips; top with half each of chicken, salsa mixture and cheeses. Sprinkle with 1/2 cup of the cilantro. Chop onion. Cut sausage into 1/2 in. slices. Lightly spray skillet with nonstick cooking spray. Add corn to skillet in a single layer. Heat oil in skillet over medium heat 1-3 minutes or until shimmering. Thinly slice the omion and peppers. Place onion, peppers and rub in skillet; cook 4-5 minutes or until peppers are tender, stirring occasionally. Add chicken; cook 2 minutes or until heated through. Add barbecue sauce; cook 1 minute or until heated through. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;Prepare Corn Cakes. Combined corn muffin mix and chipotle rub inbowl. Add milk, egg and butter; mix according to package directions. Heat griddle over medium-low heat for about 3 minutes. Using a medium scoop, scoop batter onto griddle. Cook 1 1/2 -2 minutes or until golden brown, turning once. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;To assemble: place chicken and pepper mixture ontop of the corn cake and then place the cole slaw mix ontop of the chicken. Southwestern style pasteurized egg product&lt;br /&gt;8 oz. pork chorizo sausage&lt;br /&gt;2 poblano peppers&lt;br /&gt;1 small onion&lt;br /&gt;1 can (14.5 oz) petite diced tomatoes with green chilies, drained&lt;br /&gt;2 cups shredded Chihuahua cheese, divided&lt;br /&gt;1 cup corn chips, crushed (optional)&lt;br /&gt;&lt;br /&gt;Cut bread into 1-in. cubes. In bowl, whisk cream cheese until smooth. Add egg product; whisk until well blended. Place half of the bread cubes over bottom of Deep Covered Baker; pour half of the egg mixture over bread cubes. Add remaining bread cubes to bowl with egg mixture; stir to coat.&lt;br /&gt;In skillet, cook chorizo over medium-high heat 7 minutes, breaking into crumbles; drain if necessary. Chop peppers and onion; add to skillet; cover and cook 3-4 minutes or until peppers are crisp tender. Remove skillet from heat. Add tomatoes and 1 1/2 cups of the chihuahua cheese; stir to combine.&lt;br /&gt;Place half of the sausage mixture over bread cubes in baker. Add remaining bread cube mixture to baker; top with remaining sausage mixture. Microwave, covered, on High 10-12 minutes or until center is set and temperature reaches 140F in center. Add minced/pressed garlic and rosemary and thyme. (I used dried herbs, about 1 tsp each. But regarding the fresh herbs the original recipe said, "The leaves will fall off the stems and give a delicious and really cool flavor to your special stew.") Add the mushrooms, and stir occasionally, 3 - 5 minutes. Season the mushrooms up with a little salt and pepper as they're cooking. Next add tomatoes and chopped up roasted red peppers. Squeeze as much liquid as possible out of the spinach and add, along with tomato sauce and chicken broth. Stir until the spinach is all broken up in the broth. Cut the chicken tenders into 1-inch pieces across and add them to the stew. When the stew comes up to a boil again, add the ravioli and leave the lid off. Cook stew until the ravioli is almost done, about 5 minutes. (Or longer, according to package instructions.) Turn off the heat and let the stew cool down a little bit. Serve the stew and pass parmesan cheese and chewy bread at the table to go with it.&lt;br /&gt;&lt;br /&gt;*I don't like mushrooms so I leave them out and I also leave the roasted peppers out because its not something I usually have on my shelf. We have it at least once a month and the leftovers are really good too. I make this in a large rectangle casserole dish, so that I get leftovers. You can cut the recipe in half if you don't want the leftovers.&lt;br /&gt;&lt;br /&gt;2lbs. ground beef&lt;br /&gt;taco seasoning (I don't measure&lt;br /&gt;salt, to taste&lt;br /&gt;pepper, to taste&lt;br /&gt;2 cans cream of mushroom soup&lt;br /&gt;1 can corn or any vegetable&lt;br /&gt;tater-tots&lt;br /&gt;shredded cheddar cheese&lt;br /&gt;&lt;br /&gt;Press the ground beef into a large rectangle dish, evenly. Sprinkle on the taco seasoning, enough to somewhat cover the meat(I think the more the better) and the salt &amp;amp; pepper. Spread on the soup, evenly, over the meat. Sprinkle on the corn. Place the tater-tots on top of the corn in rows, to cover the whole thing. Then add a layer of shredded cheese (again, I think the more the better). My family loved them so much that we had them 2 nights in a row and Jacob wants them again for his birthday dinner. The first night I made them using the Lime Chicken. The flavor was really good but we didn't like the chicken being in chunks, I will shred the chicken next time. The second night I used the Enchilada Chicken. My family seemed to like this better, maybe because it was shredded. Other than the chicken, the tacos were the same.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Lime Chicken&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;1 1/2 lb. chicken&lt;br /&gt;1/8 c. red wine vinegar&lt;br /&gt;1 lime, juiced&lt;br /&gt;1 tsp. white sugar&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;1/2 tsp. ground black pepper&lt;br /&gt;2 green onions, chopped&lt;br /&gt;2 cloves garlic, minced&lt;br /&gt;1 tsp. dried oregano&lt;br /&gt;&lt;br /&gt;Saute chicken, in medium saucepan over medium high heat for about 20 minutes. Shredded the chicken and return to pan (this is what I will change). Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic, and oregano. Simmer for 10 more minutes.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Enchilada Chicken&lt;/strong&gt;&lt;br /&gt;&lt;strong&gt;&lt;/strong&gt;&lt;br /&gt;1 1/2 lb. chicken&lt;br /&gt;1/2 -1 c. mild green enchilada sauce (I used 1 c. because I like more sauce)&lt;br /&gt;1/4 c. brown sugar&lt;br /&gt;&lt;br /&gt;Place chicken in slow cooker with 1/3 c. water. Season with salt, pepper, and garlic salt. Cook on low for about 5 hours. Remove from cooker and drain. Shred meat with forks and place back in the slow cooker. In another bowl mix the enchilada sauce and brown sugar until combined. Pour over the chicken, mix well. First if you buy a roast with a bone it will cook faster because the bone will help transfer the heat. Second depending on the roast will depend on how you cook it. If your meat is tough you may consider braising it. To do so you need to get a large pot with a little oil in it. Heat up the oil, then take your meat and brown all sides(allowing outsides to caramelize and hold in juices better). Remove meat and add carrots, onion, etc. and saute. Put meat back into pot and fill with a liquid (usually a stock) half way up the meat. You can then simmer on the stove or put into the oven until meat is cooked and tender. It is important to cook slowly and lower heat so the liquid has time to breakdown the toughness. Otherwise if your meat is not tough and is a good quality cut you can just put it straight into the oven. Once meat is finished remove from heat and allow to rest for 15-20 min. before cooking, this allows juices to get pulled back into meat and distribute more evenly. When making gravy from a juice of a meat all you need to do is a something to thicken it up and some seasonings. Just mix a little bit of flour with some warm water and then slowly pour into your pot of meat juices. Mixing the flour and warm water first will keep you from getting lumps in your gravy. Also if your gravy has a flour taste to it its ok, it does not mean you added too much and its ruined. An interesting thing I recently learned is that garlic can produce different flavors depending on the way it is prepared. When garlic comes into contact with air, you get a more bitter/sharp taste. If you are trying to avoid the bitter taste try not to incorporate  air, food processors do this. It is suggested the best tool to use is a mortar and pestle because it keeps it from getting air and the heat a processor would do. And as we are on the topic of garlic...keep all oil and garlic mixtures in the refrigerator because they can easily grow harmful bacteria. She asked me if I would send her an email every once in a while with helpful tips or facts. So I decided I might as well post them on this sight so everyone can hear them (unless you would prefer I don't)... anyway, sorry if they are common sense or pretty obvious it is nice to have a reminder or it might strike a question. Please feel free to ask questions too, it will help us all learn. Well then enough said lets get to the point.....&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I am currently enrolled in Culinary Nutrition so I thought I would start there with giving you a fact.&lt;/div&gt;&lt;div&gt;*When purchasing whole wheat bread, be aware that titles are deceiving, even if a title had the words whole wheat it does not mean it is whole wheat. Also if a bread is brown in color, it does not mean it is whole wheat (molasses is added to white bread to appear whole wheat). So how do you tell... the list of ingredients is a useful tool. When ingredients are listed the are ordered by weight. Therefore the items at the beginning of the list have the highest quantity. This meaning you should see the words whole wheat flour as the first ingredient. &lt;/div&gt;&lt;div&gt;My other class is Safety and Sanitation so here are a few fact from there.&lt;/div&gt;&lt;div&gt;*There first one I have to mention should be obvious, but most people just don't think about it. Plus it has to do with a food that most people make for large gatherings. Potato salad... it's just asking for bacteria to start growing and since I have been in this class I have heard too many stories of illnesses because of this food. Let me just say that when you make potato salad please please please cool ingredients before you mix things together. When you take warm potatoes and warm eggs and mix them with mayo and all the other good stuff. It makes the whole mixture warm. Most people than put it in the large bowl to cool in the fridge, but with all that warm food so close, it just became a nice warm place for bacteria to grow. It would take a long time for it all to cool properly in the large bowl, plus you are than just going to take it out and let it sit longer at the picnic. Slowly add flour and mix well with pastry hook.  Knead with hands.  roll out very thin on a floured cutting board and cut into 1/4 inch strips. Use immediately or dry and store in an airtight container.&lt;br /&gt;&lt;br /&gt;Soup&lt;br /&gt;6 cups water&lt;br /&gt;2 Chicken breasts&lt;br /&gt;3 chopped carrots&lt;br /&gt;3 stalks celery chopped&lt;br /&gt;1 small onion chopped&lt;br /&gt;2 tsp. salt&lt;br /&gt;3 tsp. chicken bouillon&lt;br /&gt;Pinch of garlic salt&lt;br /&gt;1 bay leave&lt;br /&gt;Pinch of pepper&lt;br /&gt;&lt;br /&gt;combine all soup ingredients in stockpot.  Bring to a boil and reduce to a simmer until chicken is cooked through, about 35 minutes.  Using a slotted spoon, transfer chicken to a cutting board and cool slightly.  Cut into bite size pieces. Return chicken and homemade noodles to soup and simmer 10 minutes. Combine bread crumbs, coconut, salt and pepper in gallon freezer bag.&lt;br /&gt;Let chicken thaw in buttermilk. Then dip chiken in bread crumb mixture, place in baking dish. Cook at 350 degrees for one hour. Then I pounded it out and put mozzarella cheese and some basil, oregano, and salt and pepper. then I wrapped it up and hooked it with tooth picks. I then wrapped it in a slice of bacon and sprinkle garlic and parsley on it. I then baked it in the oven. Hunts tomato sauce&lt;br /&gt;&lt;br /&gt;In a big wok or rounded bottom pan, heat the oil and salt over medium-high heat. Add the rice, let it cook a little, for 2-3 minutes. Add in both tomato sauces and mix, let cook another couple of minutes. Mix in the water. Let cook over medium-high heat until most of the water is evaporated. Cover with a fitted lid and allow to simmer on low heat for about 20 minutes. (12 oz each) broccoli slaw&lt;br /&gt;4 green &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_3"&gt;onions&lt;/span&gt;, sliced&lt;br /&gt;1/2 cup Planters dry roasted sunflower kernels&lt;br /&gt;1/2 cup Planters sliced almonds, toasted&lt;br /&gt;&lt;br /&gt;Mix dressing with seasoning &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;packet&lt;/span&gt; from 1 of the soup &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;mixes&lt;/span&gt;. (4 serving size each) Instant Vanilla pudding&lt;br /&gt;2 cups thawed cool whip&lt;br /&gt;1 cup Planters chopped pecans&lt;br /&gt;&lt;br /&gt;Mix graham crumbs, 1/4 cup of sugar and the butter; press onto the bottom of a 13x9 -inch pan. Freeze 10 min.&lt;br /&gt;Beat cream cheese remaining 3/4 cup sugar with electric mixer until well blended.Spread carefully over crust.Top with pineapple and sliced bananas.&lt;br /&gt;Pour milk into large bowl. Add the dry pudding mixes.Beat with whisk for 2 minutes or until well blended.Gently stir in 1 cup of cool whip.Spread over the banana layer.Top with remaining 1 cup of cool whip.Refrigerate at least 5 hours.&lt;br /&gt;Slice remaining bananas just before serving; arrange on top.Sprinkle with pecans.&lt;br /&gt;When I made this I did not think that it was necessary to have more cool whip on the top (I thought the sugar count was high enough). So, I crossed that off the list. Then I thought what is a banana slip with out chocolate sauce and strawberries. So, I drizzled some chocolate syrup on the top and instead of the bananas on top I sliced up some strawberries. I am not the biggest fan of pecans, so I used chopped peanuts.This was a really good treat. I got this recipe from Taste of Home.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;1-1/2 pounds ground beef&lt;br /&gt;1 envelope taco seasoning&lt;br /&gt;1/2 cup water&lt;br /&gt;1 can (16 ounces) refried beans&lt;br /&gt;1/2 cup salsa&lt;br /&gt;6 flour tortillas (6 inches)&lt;br /&gt;2 cups frozen corn, thawed (or canned)&lt;br /&gt;2 cups (8 ounces) shredded cheddar cheese&lt;br /&gt;Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream, optional&lt;br /&gt;&lt;br /&gt;Directions: In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Meanwhile, in a microwave-safe bowl, combine beans and salsa. Cover and microwave for 1-2 minutes or until spreadable. Place three tortillas in a greased round 2-1/2-qt. baking dish. Layer with half of the beef, bean mixture, corn and cheese; repeat layers. Bake, uncovered, at 350° for 40-45 minutes or until cheese is melted. Let stand for 5 minutes. Serve with lettuce, tomatoes, olives and sour cream if desired. Worcestershire sauce&lt;br /&gt;1 Tbsp. minced garlic&lt;br /&gt;1 Tbsp. dried oregano&lt;br /&gt;2 tsp. ground cumin&lt;br /&gt;1 tsp. dried basil&lt;br /&gt;1 tsp. salt&lt;br /&gt;1 tsp. ground black pepper&lt;br /&gt;1 tsp. cayenne pepper&lt;br /&gt;1 tsp. paprika&lt;br /&gt;1 tsp. white sugar&lt;br /&gt;Bag of corn chips&lt;br /&gt;Shredded cheese&lt;br /&gt;&lt;div&gt;&lt;br /&gt;1. (I use more) chopped broccoli&lt;br /&gt;1 1/2 c. sliced onion&lt;br /&gt;1 Tbsp. minced peeled fresh ginger&lt;br /&gt;4 garlic cloves, minced&lt;br /&gt;12 oz. sirloin tips, cut crosswise into thin strips (or any kind of tender beef)&lt;br /&gt;3 Tbsp. beef broth&lt;br /&gt;3 Tbsp. low-sodium soy sauce&lt;br /&gt;2 Tbsp. brown sugar&lt;br /&gt;1 Tbsp. oyster sauce (I did not use this because I couldn't find it, and it still tasted great)&lt;br /&gt;&lt;br /&gt;1. Stir the spaghetti into a pot of lightly salted boiling water and cook according to &lt;span id="SPELLING_ERROR_1" class="blsp-spelling-corrected"&gt;package&lt;/span&gt;.
